Cheesy Taco Cream Cheese Pasta
Ingredients:
– 8 oz pasta (penne, rotini, or your preferred type)
– 1 lb ground beef (or ground turkey)
– 1 packet (1 oz) taco seasoning
– 1/2 cup water
– 1 can (10 oz) Rotel (diced tomatoes with green chilies, drained)
– 4 oz cream cheese, softened
– 1/2 cup sour cream
– 1 cup shredded cheddar cheese
– 1/2 cup shredded mozzarella cheese
– Salt and pepper, to taste
– Optional toppings: chopped cilantro, green onions, diced tomatoes, or crushed tortilla chips
Instructions:
1. Prepare the Pasta:
In a large pot, bring salted water to a boil. Cook the pasta according to the package directions until it reaches al dente. Drain and set aside.
2. Brown the Ground Beef:
In a large skillet, cook the ground beef over medium-high heat until it is browned and fully cooked. Drain any excess fat.
3. Incorporate Taco Seasoning:
Add the taco seasoning and 1/2 cup of water to the skillet with the beef. Mix thoroughly and let it simmer for 2-3 minutes until the sauce thickens.
4. Mix in Creamy Ingredients:
Lower the heat. Stir in the Rotel, cream cheese, and sour cream until the mixture is smooth and creamy.
5. Combine with Pasta:
Add the cooked pasta to the skillet containing the beef and creamy sauce. Toss everything together until the pasta is evenly coated.
6. Add Cheese:
Sprinkle the shredded cheddar and mozzarella cheese over the pasta. Cover the skillet and let it sit for 2-3 minutes, or until the cheese melts and becomes gooey.
7. Serve:
Top with your choice of garnishes such as chopped cilantro, green onions, or crushed tortilla chips. Serve warm and enjoy!
