Potato tacos
Potato Tacos with Green Chilies Recipe! These crunchy and delicious tacos are ideal for a quick and satisfying meal.
Ingredients:
– 3 large russet potatoes, peeled and diced
– 1 tablespoon butter or oil
– 1 small onion, finely chopped
– 1 can (4 oz) diced green chilies, drained
– ½ teaspoon garlic powder
– ½ teaspoon cumin
– ½ teaspoon smoked paprika
– Salt and black pepper to taste
– ½ cup shredded cheese (cheddar, Monterey Jack, or a blend)
– 8 small corn tortillas
– Oil for frying
Instructions:
1. Boil the Potatoes
In a pot, cook the diced potatoes in salted water for approximately 10–12 minutes or until they are tender when pierced with a fork. Drain and lightly mash, keeping some chunks intact.
2. Prepare the Filling
In a skillet over medium heat, melt the butter or warm the oil. Add the chopped onion and sauté until it becomes soft, about 3 minutes.
Incorporate the green chilies, garlic powder, cumin, smoked paprika, salt, and pepper. Continue cooking for an additional 2 minutes.
Mix in the mashed potatoes and combine thoroughly. Add the shredded cheese and stir until it melts. Remove from heat.
3. Assemble & Cook the Tacos
Heat a small amount of oil in a skillet over medium heat.
Warm the tortillas until they are flexible. Place about 2 tablespoons of the potato filling on one side of each tortilla. Fold the tortilla in half and press down gently.
Fry each taco for approximately 2–3 minutes on each side until they are crispy and golden brown. Drain on paper towels.
4. Serve & Enjoy!
Serve the tacos warm with salsa, sour cream, guacamole, or your preferred toppings!
