Broccoli Cheese Patties

Ingredients:

– 2 cups of finely chopped fresh or frozen broccoli (steamed and cooled)
– 1 cup of shredded cheddar cheese
– 1/2 cup of breadcrumbs (either panko or regular)
– 2 large eggs
– 1/4 cup of grated Parmesan cheese
– 1/4 cup of chopped green onions (optional)
– 1 teaspoon of garlic powder
– 1/2 teaspoon of onion powder
– Salt and pepper to taste
– Olive oil or butter for frying

Instructions:

1. Prepare the Broccoli
Steam the broccoli until it is tender. Allow it to cool, then chop it finely or pulse it in a food processor.

2. Combine Ingredients
In a mixing bowl, combine the broccoli, cheddar cheese, breadcrumbs, eggs, Parmesan cheese, green onions (if desired), garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed.

3. Shape the Patties
Using your hands, shape the mixture into small, flat patties, approximately 2-3 inches in diameter.

4. Cook the Patties
Heat a skillet over medium heat and add a splash of olive oil or a small amount of butter. Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.

5. Serve
Enjoy the patties warm with your choice of dip, such as sour cream, ranch dressing, or a spicy aioli.
