Mexican Street Corn (Elote)
Ingredients:
– 4 ears of corn (husked)
– 1/3 cup mayonnaise
– 1/3 cup sour cream or Mexican crema
– 1/2 cup crumbled cotija cheese
– 1 tsp chili powder or Tajín seasoning
– 1 clove garlic (minced, optional)
– 1 tbsp fresh lime juice
– 2 tbsp chopped cilantro (optional, for garnish)
– Lime wedges (for serving)
Instructions:
1. Grill the Corn:
Begin by preheating your grill to medium-high heat. Place the husked corn directly onto the grill and cook for approximately 10-15 minutes, turning occasionally, until it is charred and fully cooked.
2. Prepare the Sauce:
In a small bowl, combine the mayonnaise, sour cream (or crema), lime juice, and minced garlic (if using).
3. Assemble the Corn:
After the corn is grilled, use a brush or spoon to evenly coat each ear with the sauce mixture.
