Meatloaf with Caramelized Onion Gravy:

Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend)

1 cup breadcrumbs (Panko or regular)

½ cup milk

1 large egg

1 small onion, finely chopped

2 garlic cloves, minced

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

For the Caramelized Onion Gravy:

2 medium onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 ½ cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon all-purpose flour

Salt and pepper, to taste

Instructions

Prepare the Meatloaf:

1. Preheat Oven: Set your oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.

2. Combine Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, pepper, and smoked paprika. Mix gently until just blended.

3. Form Meatloaf: Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.

4. Bake: Bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C). Remove from the oven and allow it to rest for 10 minutes before slicing.

Prepare the Caramelized Onion Gravy:

1. Caramelize Onions: In a skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden and caramelized (approximately 15-20 minutes).

2. Incorporate Flour: Sprinkle the flour over the onions and stir for 1 minute.

3. Add Broth & Worcestershire: Gradually pour in the beef broth, stirring continuously to prevent lumps. Add Worcestershire sauce and season with salt and pepper. Simmer for 5-7 minutes, until the mixture thickens.

4. Serve: Slice the meatloaf and serve it topped with the caramelized onion gravy.
