Ingredients:
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup milk
– 1 egg
– 1/4 cup olive oil
– 1/2 cup shredded mozzarella cheese (plus additional for topping)
– 1/4 cup grated Parmesan cheese
– 1/4 cup chopped pepperoni or sausage (optional)
– 1/4 cup chopped black olives
– 1/4 cup diced cherry tomatoes
– 1/2 teaspoon Italian seasoning
– Fresh basil leaves for garnish

Instructions:
1. Prepare the Batter:
In a large bowl, combine the flour, baking powder, baking soda, and salt. In another bowl, whisk together the milk, egg, and olive oil. Gradually add the wet mixture to the dry ingredients, stirring until just blended.
2. Incorporate Fillings:
Carefully fold in the mozzarella cheese, Parmesan cheese, pepperoni, black olives, and Italian seasoning.
3. Fill the Muffin Tins:
Line muffin tins with paper liners or grease them thoroughly. Pour the batter into each muffin cup, filling them about three-quarters full. Sprinkle with additional mozzarella cheese, cherry tomato slices, and a few pieces of olives.
4. Air Fry:
Preheat the air fryer to 320°F (160°C). Place the muffin tins or silicone molds in the air fryer basket. Cook for 12-15 minutes, or until the muffins are golden brown and fully cooked. A toothpick inserted should come out clean.
5. Garnish and Serve:
Allow the muffins to cool for a few minutes, then garnish with fresh basil and serve warm.
