Crispy chicken
Crispy Chicken Penne with Parmesan and Creamy Sauce 🍗
Ingredients:
– 12 oz Penne Pasta
– 2 chicken breasts, thinly sliced
– 1/2 cup grated Parmesan cheese
– 1/2 cup breadcrumbs
– 1/4 cup all-purpose flour
– 1 egg, beaten
– 3 tablespoons olive oil
– 2 cups heavy cream
– 1 cup grated Parmesan cheese (for sauce)
– 2 cloves garlic, minced
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– Fresh parsley, chopped (optional, for garnish)
Directions:
1. Prepare the penne pasta according to the instructions on the package. Drain and set aside.
2. In a shallow bowl, mix together the grated Parmesan cheese and breadcrumbs. Place the flour in a separate bowl and the beaten egg in another.
3. Coat each chicken breast in flour, then dip it into the egg, and finally cover it with the Parmesan-breadcrumb mixture.
4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Cook the chicken for 4-5 minutes on each side until it is golden brown and fully cooked. Remove from the skillet and let it rest for 5 minutes before slicing.
5. In the same skillet, add 1 tablespoon of olive oil and sauté the minced garlic for about 1 minute until it becomes fragrant.
6. Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan and Italian seasoning, cooking for 3-4 minutes while stirring until the sauce thickens slightly. Season with salt and pepper to taste.
7. Add the cooked penne pasta to the creamy sauce, tossing until the pasta is evenly coated.
8. Serve the pasta on plates and top with the sliced Parmesan-crusted chicken. Optionally, garnish with fresh parsley.
