Ingredients:

– 2 cups all-purpose flour
– 2 cups granulated sugar
– 2 large eggs
– 1 (20 oz) can of crushed pineapple, with juice
– 1 teaspoon baking soda
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt

For the Frosting:

– 1/2 cup unsalted butter, softened
– 8 oz cream cheese, softened
– 3 cups powdered sugar
– 1 teaspoon vanilla extract
– Optional: 1/2 cup chopped pecans or shredded coconut for decoration

Instructions:

1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by greasing and flouring it.

2. Prepare the Batter: In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Add the eggs, vanilla extract, and the undrained crushed pineapple. Mix until just combined, being careful not to overmix.

3. Bake: Transfer the batter into the prepared baking pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

4. Make the Frosting: While the cake is cooling, beat the softened butter and cream cheese together until smooth. Gradually incorporate the powdered sugar and vanilla extract, mixing until the frosting is creamy and easy to spread.
