Mac and Cheese recipe that embodies the essence of comfort food.

Ingredients:

– 3 cups dry elbow macaroni
– 4 tablespoons unsalted butter
– 1/4 cup all-purpose flour
– 3 cups warm whole milk
– 2 cups shredded sharp cheddar cheese
– 1 cup shredded mozzarella cheese
– 1/2 teaspoon salt (to taste)
– 1/4 teaspoon black pepper
– 1/4 teaspoon paprika (optional, for added flavor)
– 1/2 cup breadcrumbs (optional, for topping)

Instructions:

1. Cook the Macaroni:

Bring a large pot of salted water to a boil and cook the macaroni according to the package directions until al dente. Drain and set aside.

2. Prepare the Cheese Sauce:

In a large saucepan, melt the butter over medium heat.

Add the flour and whisk continuously for about 1-2 minutes to form a roux.

Slowly add the warm milk while whisking to prevent lumps. Keep whisking until the mixture thickens, which should take about 5 minutes.

3. Incorporate the Cheese:

Reduce the heat and add the shredded cheddar and mozzarella cheeses. Stir until the cheeses are completely melted and the sauce is smooth.

Season the sauce with salt, pepper, and paprika.

4. Combine:

Mix the cooked macaroni into the cheese sauce, ensuring that all the pasta is well coated.

5. Optional Baking Step:

Preheat your oven to 375°F (190°C). Pour the mac and cheese into a greased baking dish.

If desired, sprinkle breadcrumbs on top for a crunchy finish. Bake for 15-20 minutes or until the top is golden and bubbly.
