Pork Schnitzel with Dijon Sauce
Golden-brown pork cutlets drizzled with a luscious mustard sauce.
Ingredients required:
– 4 boneless pork chops
– 1/2 cup all-purpose flour
– 2 large eggs
– 1 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 1 teaspoon paprika
– Salt and pepper to taste
– 3 tablespoons olive oil
For the sauce:
– 2 tablespoons unsalted butter
– 2 tablespoons all-purpose flour
– 1 cup chicken broth
– 1/2 cup heavy cream
– 2 tablespoons Dijon mustard
– 1 teaspoon Worcestershire sauce
Begin by flattening the pork chops to approximately 1/4-inch thickness and seasoning them with salt and pepper. Prepare three bowls: one with flour, another with beaten eggs, and the last with breadcrumbs combined with Parmesan and paprika. Dredge each pork chop in flour, dip it in the egg, and then coat it with the breadcrumb mixture.
In a skillet, heat olive oil over medium heat. Fry each schnitzel for 3-4 minutes on each side until they are golden and crispy. Remove them from the skillet and keep them warm.
In the same skillet, melt the butter and whisk in the flour, cooking for about a minute. Gradually incorporate the chicken broth while whisking continuously, then add the heavy cream, Dijon mustard, and Worcestershire sauce. Allow the mixture to simmer until it thickens.
Serve the schnitzels hot, generously topped with the creamy sauce.
