Cheesy Ranch Potatoes with Sausage
Ingredients:
– 1 pound smoked sausage, sliced
– 2 pounds potatoes, diced
– 1 packet ranch dressing mix
– 1 cup shredded cheddar cheese
– 1/2 cup softened cream cheese
– 1/4 cup milk
– 1/2 cup sour cream
– Salt and pepper to taste
– 2 tablespoons olive oil
– Chopped fresh parsley for garnish
Instructions:
1. Preheat the oven to 375°F (190°C) and lightly grease a large baking dish.
2. In a mixing bowl, combine the diced potatoes with olive oil, ranch dressing mix, salt, and pepper, ensuring they are well coated.
3. Transfer the seasoned potatoes to the greased baking dish and layer the sliced sausage on top.
4. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown.
5. In a separate bowl, blend the cream cheese, milk, and sour cream until the mixture is smooth.
6. Once the potatoes and sausage are done baking, remove the dish from the oven and pour the cream cheese mixture over the top. Then, sprinkle the shredded cheddar cheese evenly.
7. Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
8. Before serving, garnish with chopped parsley.
