Pudding cups
Tiramisu Pudding Cups, perfect for a quick and sophisticated dessert:
Ingredients:
– 1 package (3.4 oz) instant vanilla or cheesecake pudding mix
– 2 cups cold milk
– 1/2 cup mascarpone cheese or softened cream cheese
– 1 cup heavy whipping cream (optional, for enhanced creaminess)
– 1/2 cup strong brewed coffee, cooled
– 1 tablespoon coffee liqueur (optional)
– 12-15 ladyfinger cookies (cut into smaller pieces if necessary)
– 2 tablespoons cocoa powder (for dusting)
– Chocolate shavings or chips (optional, for garnish)
Instructions:
1. Prepare the Pudding:
In a large bowl, whisk together the pudding mix and cold milk until it thickens (approximately 2 minutes). Gently incorporate the mascarpone cheese until the mixture is smooth. If you choose to use heavy whipping cream, whip it to soft peaks and fold it into the pudding for added richness.
2. Create the Coffee Mixture:
In a shallow dish, mix the brewed coffee with the coffee liqueur (if using).
3. Assemble the Cups:
Quickly dip the ladyfinger pieces into the coffee mixture (avoid soaking to prevent sogginess). Layer the coffee-soaked ladyfingers at the bottom of each serving cup or glass. Follow with a layer of the pudding mixture. Continue layering until the cups are filled, finishing with a layer of pudding.
4. Chill:
Cover the cups and refrigerate for a minimum of 2 hours (or overnight) to allow the flavors to blend.
5. Serve:
Before serving, dust the tops of each cup with cocoa powder. Optionally, garnish with chocolate shavings or chips.
Savor these creamy, coffee-infused pudding cups that capture the essence of traditional tiramisu! They are ideal for individual servings at any gathering.
