Strawberry Cheesecake Bars:
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 tablespoons sugar
For the cheesecake filling:
16 oz (2 packages) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the strawberry topping:
1 ½ cups fresh or frozen strawberries, diced
¼ cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 1 tablespoon water

Instructions:
1. Preheat the oven:
Set your oven to 325°F (160°C). Prepare an 8×8-inch baking pan by lining it with parchment paper, allowing some overhang for easy removal.
2. Prepare the crust:
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Firmly press this mixture into the bottom of the prepared pan. Bake for 10 minutes, then let it cool slightly.
3. Make the cheesecake filling:
In a separate bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, ensuring thorough mixing after each addition. Finally, incorporate the vanilla extract.
4. Pour and bake:
Evenly distribute the cheesecake filling over the cooled crust. Bake for 30–35 minutes, or until the center is set but still slightly jiggly. Allow it to cool at room temperature, then refrigerate for at least 3 hours or overnight.
5. Prepare the strawberry topping:
In a small saucepan, mix together the strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries soften and release their juices, approximately 5–7 minutes. Stir in the cornstarch mixture and continue cooking until thickened. Allow to cool completely.
6. Assemble the bars:
Spread the cooled strawberry topping over the cheesecake layer. Cut into bars and serve.
