Fried salmon

Fried Salmon Patties:

Ingredients:

– 2 cups cooked salmon (flaked, either fresh or canned, drained)
– 1/2 cup breadcrumbs or crushed crackers
– 1/4 cup finely chopped onion
– 1/4 cup finely chopped bell pepper (optional)
– 2 large eggs
– 1/4 cup mayonnaise
– 1 tablespoon fresh lemon juice
– 1 teaspoon Dijon mustard
– 1 teaspoon garlic powder
– 1 teaspoon parsley (fresh or dried)
– Salt and pepper, to taste
– Oil, for frying

Instructions:

1. Combine the ingredients: In a large mixing bowl, blend the cooked salmon, breadcrumbs, onion, bell pepper (if desired), eggs, mayonnaise, lemon juice, Dijon mustard, garlic powder, parsley, salt, and pepper until thoroughly mixed.

2. Shape the patties: Form the mixture into small patties, approximately 2–3 inches in diameter. If the mixture appears too moist, incorporate additional breadcrumbs.

3. Heat the oil: In a skillet, heat a thin layer of oil over medium heat.

4. Cook the patties: Add the patties to the skillet and fry for 3–4 minutes on each side, or until they are golden brown and crispy. Handle gently when flipping to avoid breaking.

5. Drain and serve: Transfer the patties from the skillet to a plate lined with paper towels to absorb excess oil. Serve warm.

Serving Suggestions:

Accompany with tartar sauce, a squeeze of lemon, or your preferred dipping sauce.

Pair with a fresh salad, roasted vegetables, or rice for a well-rounded meal.
