Chinese Pork Asado
Ingredients and Recipe:
– 2-3 tablespoons of oil
– 1 kg of pork shoulder
– 2 cloves of minced garlic
– 1 medium onion, finely chopped
– 1/2 cup of soy sauce
– 2 tablespoons of rice wine (optional)
– 1/4 cup of brown sugar
– 2 teaspoons of five-spice powder
– 1-2 cups of water
– 2 teaspoons of cornstarch mixed with 2 tablespoons of water
Instructions:
1. In a pot, heat the oil over medium heat. Sear the pork shoulder on all sides until it achieves a light brown color. Once browned, remove the pork from the pot and set it aside.
2. Using the same pot, sauté the minced garlic and chopped onion until they become tender.
3. Return the pork to the pot. Add the soy sauce and rice wine, followed by the brown sugar and five-spice powder. Cook the mixture until the sugar has caramelized.
4. Add sufficient water to fully submerge the meat. Cover the pot with a lid and allow it to simmer on low heat until the pork is tender enough to be easily pierced with a fork.
5. Once tender, remove the lid and increase the heat to medium-high to reduce the liquid. Incorporate the cornstarch mixture and continue to simmer until the sauce thickens.
6. Take the pork out of the sauce and let it rest for 10 minutes on a cutting board. Slice the pork into thin pieces.
7. Arrange the sliced pork on a serving platter. Generously drizzle the thick, sweet, and savory sauce over the meat and serve while warm.
