Southern Pecan Caramel Cake Recipe
Ingredients:
For the Cake:
– 2 ½ cups all-purpose flour
– 2 cups granulated sugar
– 1 cup unsalted butter, softened
– 4 large eggs
– 1 cup whole milk
– 2 teaspoons baking powder
– 1 teaspoon vanilla extract
– ½ teaspoon salt
For the Caramel Frosting:
– 1 cup packed light brown sugar
– ½ cup unsalted butter
– ¼ cup whole milk
– 1 teaspoon vanilla extract
– 2 cups powdered sugar
For the Topping:
– 1 cup chopped pecans (toasted, if preferred)

Instructions:
1. Prepare the Cake:
Begin by preheating your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans or line them with parchment paper.
In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
Incorporate the eggs one at a time, ensuring to beat well after each addition.
In another bowl, sift the flour, baking powder, and salt together.
Gradually mix the dry ingredients into the butter mixture, alternating with the milk, starting and finishing with the dry ingredients.
Add the vanilla extract and mix well. Evenly distribute the batter among the prepared pans.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
2. Prepare the Caramel Frosting:
In a medium saucepan over medium heat, combine the brown sugar and butter. Stir continuously until the butter has melted and the sugar is fully dissolved.
Add the milk and bring the mixture to a gentle boil for 2 minutes, then remove it from the heat.
Stir in the vanilla extract and gradually whisk in the powdered sugar until the mixture is smooth. Let the frosting cool slightly to thicken.
3. Assemble the Cake:
Place one layer of cake on a serving plate and generously spread caramel frosting on top.
Repeat this process with the second and third layers, frosting the top and sides of the cake.
4. Add the Pecans:
Gently press the chopped pecans onto the sides of the cake and sprinkle some on top for decoration.
5. Serve:
Allow the cake to set for approximately 30 minutes before slicing. Enjoy the decadent, buttery flavor.
