Ingredients
– 2/3 cup cornmeal
– 1/3 cup self-rising flour
– 1/3 cup low-fat buttermilk
– 1 large egg
– 1/4 cup water (adjust as necessary)
– 1 teaspoon sugar (optional, for a touch of sweetness)
– Oil for frying (vegetable or canola oil)
Instructions
1. Prepare the Batter:
In a medium-sized bowl, combine the cornmeal, self-rising flour, and sugar if desired. In a separate small bowl, whisk together the buttermilk, egg, and water. Gradually incorporate the wet mixture into the dry ingredients, stirring until the batter is smooth. It should be thick yet pourable; add a little more water if necessary.
2. Heat the Oil:
In a large skillet, pour in approximately 1/4 inch of oil and heat it over medium heat. The oil should be hot but not smoking, ideally around 350°F if you are using a thermometer.
3. Fry the Cornbread:
Using a spoon or small ladle, drop spoonfuls of the batter into the hot oil, gently spreading them to form small rounds. Fry for 2 to 3 minutes on each side, or until they are golden brown and crispy.
4. Drain Excess Oil:
Once fried, remove the cornbread from the skillet and place it on a plate lined with paper towels to absorb any excess oil.
