Garlic Butter Chicken Bites:

Ingredients:

– 2 tablespoons all-purpose flour
– 1 ½ teaspoons Italian seasoning
– Salt and freshly ground black pepper, to taste
– 1 tablespoon olive oil
– 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
– 4 tablespoons unsalted butter
– 3-4 garlic cloves, minced
– 1 teaspoon paprika
– 2 tablespoons chopped fresh parsley, for garnish

Instructions:

1. Prepare the Chicken:

In a mixing bowl, combine the flour, Italian seasoning, paprika, salt, and pepper. Coat the chicken pieces in the flour mixture until they are evenly covered.

2. Sear the Chicken:

Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 3-4 minutes on each side, or until they are golden brown and fully cooked. If necessary, work in batches. Once cooked, remove the chicken from the skillet and set aside.

3. Make the Garlic Butter Sauce:

Lower the heat to medium. In the same skillet, add the butter and allow it to melt. Incorporate the minced garlic and sauté for 1-2 minutes until it becomes fragrant.

4. Combine Chicken and Sauce:

Return the chicken bites to the skillet and toss them in the garlic butter sauce. Cook for an additional 2-3 minutes, allowing the chicken to absorb the flavors.

5. Garnish and Serve:

Top the chicken with chopped parsley and serve immediately.

Serving Suggestions:

This dish pairs well with creamy mashed potatoes, pasta, or steamed vegetables for a complete meal. For a low-carb alternative, consider serving it over cauliflower rice or alongside a fresh salad.
