Shrimp soup
Seafood Bisque Featuring Crab, Shrimp, and Lobster
Ingredients:
– 1/2 lb shrimp, peeled and deveined
– 1/2 lb lump crab meat
– 1/2 lb lobster meat, chopped
– 4 tbsp butter
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1/4 cup all-purpose flour
– 3 cups seafood or chicken broth
– 1 cup heavy cream
– 1/2 cup white wine (optional)
– 1 tsp Old Bay seasoning
– 1/2 tsp paprika
– Salt and pepper to taste
– Fresh parsley for garnish (optional)
Directions:
1. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the finely chopped onion and minced garlic, sautéing for 3-4 minutes until they become tender.
2. Prepare the Roux: Incorporate the flour into the mixture, cooking for 1-2 minutes while stirring continuously.
3. Incorporate Liquids: Gradually add the broth and white wine (if desired), stirring until the mixture reaches a thickened consistency. Then, mix in the heavy cream, Old Bay seasoning, paprika, salt, and pepper. Allow the mixture to come to a simmer.
4. Add the Seafood: Gently fold in the shrimp, crab, and lobster meat. Continue cooking for an additional 5-7 minutes, or until the shrimp turn pink and are fully cooked.
5. Serve: Garnish with fresh parsley and serve the bisque warm alongside crusty bread.
