Potato casserole

Meat and Potato Casserole, perfect for a fulfilling and comforting meal:

Ingredients:

– 1 pound of ground beef (or ground turkey)
– 1 small onion, finely chopped
– 2 cups of frozen mixed vegetables (optional, such as peas, carrots, or green beans)
– 4 cups of thinly sliced potatoes (approximately 3–4 medium potatoes)
– 1 can (10.5 oz) of cream of mushroom soup (or cream of chicken)
– 1 cup of milk
– 1 cup of shredded cheddar cheese
– 1 teaspoon of garlic powder
– 1 teaspoon of paprika
– Salt and pepper to taste
– 1 tablespoon of olive oil

Instructions:

1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C) and greasing a 9×13-inch baking dish.

2. Cook the Meat: In a skillet, heat the olive oil over medium heat. Sauté the chopped onion until it becomes soft, then add the ground beef. Cook until it is browned and crumbled, draining any excess grease. Season with garlic powder, paprika, salt, and pepper. If desired, stir in the frozen mixed vegetables.

3. Prepare the Potatoes: Peel and slice the potatoes thinly. Arrange half of the slices evenly at the bottom of the prepared baking dish.

4. Assemble the Layers: Spread the cooked meat mixture over the layer of potatoes. Then, place the remaining potato slices on top of the meat.

5. Prepare the Sauce: In a bowl, combine the cream of mushroom soup and milk, whisking until smooth. Pour this mixture evenly over the casserole.

6. Bake: Cover the dish with aluminum foil and bake for 45 minutes. After this time, remove the foil, sprinkle the shredded cheddar cheese on top, and continue baking for an additional 15–20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

7. Serve: Allow the casserole to rest for 5 minutes before serving. It pairs well with a fresh salad or dinner rolls for a complete meal.
