Crème Brûlée Cheesecake:
Ingredients:
For the Crust:
1 1/2 cups of graham cracker crumbs
1/4 cup of melted butter
2 tablespoons of sugar
For the Cheesecake Filling:
24 oz (3 packages) of softened cream cheese
1 cup of granulated sugar
3 large eggs
1 cup of heavy cream
1 tablespoon of vanilla extract
1/4 teaspoon of salt
For the Topping:
1/4 cup of granulated sugar (for caramelization)

Instructions:
1. Prepare the Crust:
1. Begin by preheating the oven to 325°F (160°C).
2. In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and sugar, mixing until thoroughly blended.
3. Firmly press the mixture into the base of a 9-inch springform pan, using the back of a spoon to ensure an even layer.
4. Bake the crust for 8-10 minutes, then allow it to cool while you prepare the filling.

2. Prepare the Cheesecake Filling:
1. In a large mixing bowl, beat the softened cream cheese and sugar together until the mixture is smooth and creamy, approximately 2-3 minutes.
2. Incorporate the eggs one at a time, mixing on low speed after each addition.
3. Add the heavy cream, vanilla extract, and salt, mixing until all ingredients are well combined.

3. Assemble and Bake:
1. Pour the cheesecake mixture over the cooled crust, spreading it out evenly.
2. Place the springform pan inside a larger roasting pan. Fill the roasting pan with hot water until it reaches about halfway up the sides of the springform pan, creating a water bath to prevent cracking.
3. Bake for 60-70 minutes, or until the center is slightly jiggly but the edges are set.
4. Turn off the oven, slightly open the door, and allow the cheesecake to cool in the oven for 1 hour.
5. Afterward, remove the cheesecake from the oven and refrigerate for a minimum of 4 hours or overnight.

1. Just before serving, evenly distribute 1/4 cup of sugar over the surface of the cheesecake.
