Ingredients
– 8 medium fresh beets
– 1 cup vinegar
– 1-1/2 teaspoons whole cloves
– 1-1/2 teaspoons whole allspice
– 1/2 teaspoon salt
Directions
Begin by scrubbing the beets and trimming the tops to a length of 1 inch. Place the beets in a Dutch oven and add enough water to cover them. Bring the water to a boil, then reduce the heat and let it simmer, covered, for 25 to 30 minutes or until the beets are tender. Once cooked, remove the beets from the water and allow them to cool. After cooling, peel the beets and slice them, then transfer them to a bowl and set aside.
In a small saucepan, mix together the vinegar, cloves, allspice, and salt. Bring this mixture to a boil and let it boil for 5 minutes. Pour the hot mixture over the sliced beets. Refrigerate for at least one hour before serving.
