Ingredients:
– 3 cups of cooked chicken, either shredded or diced (rotisserie chicken is an excellent option)
– 1/2 cup of mayonnaise (adjust according to your preference)
– 1/4 cup of plain Greek yogurt (optional for added tanginess)
– 1 tablespoon of Dijon mustard
– 1 teaspoon of lemon juice
– 1/2 teaspoon of garlic powder
– Salt and black pepper to taste
– 1/2 cup of finely diced celery
– 1/4 cup of finely diced red onion
– 1/3 cup of sweetened dried cranberries or halved grapes
– 1/3 cup of chopped toasted pecans or almonds
– 1/4 cup of chopped fresh parsley (optional)
Instructions:
1. Prepare the Chicken: In a large mixing bowl, combine the shredded or diced chicken with the celery, onion, cranberries or grapes, and nuts.
2. Prepare the Dressing: In a separate small bowl, blend the mayonnaise, Greek yogurt (if included), Dijon mustard, lemon juice, garlic powder, salt, and pepper until the mixture is smooth.
3. Combine Ingredients: Drizzle the dressing over the chicken mixture and toss thoroughly to ensure everything is evenly coated.
4. Chill: Cover the bowl and refrigerate for a minimum of 30 minutes to allow the flavors to develop.
5. Serve: This salad can be enjoyed in a sandwich, on crackers, or served atop a bed of greens.
