Crockpot soup
Crockpot Cowboy Soup
Ingredients:
– 1 pound ground beef
– 1 medium onion, chopped
– 1 can diced tomatoes (14.5 ounces)
– 1 can tomato sauce (8 ounces)
– 1 can whole kernel corn (15 ounces), drained
– 1 can pinto beans (15 ounces), drained
– 1 can kidney beans (15 ounces), drained
– 4 cups beef broth
– 1 packet taco seasoning
– 1 cup potatoes, chopped
– Salt and pepper to taste
Instructions:
Begin by browning the ground beef along with the chopped onion in a skillet over medium heat. Once cooked, drain any excess fat.
Transfer the beef and onion mixture to the crockpot.
In the crockpot, combine the diced tomatoes, tomato sauce, corn, pinto beans, kidney beans, beef broth, taco seasoning, and chopped potatoes.
Cover the crockpot and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the potatoes are tender.
Before serving, adjust the seasoning with salt and pepper as desired.
