Meatballs with Potatoes and Cheese
Ingredients:
For the Meatballs:
1 lb (450g) ground beef or pork (or a combination)
1 egg
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1/4 cup chopped parsley
1 tsp onion powder
Salt and pepper, to taste
For the Potatoes and Cheese:
4-5 medium potatoes, peeled and thinly sliced
1 cup shredded mozzarella cheese
1/2 cup heavy cream (or milk)
1 tsp smoked paprika
1 tsp garlic powder
Salt and pepper, to taste
2 tbsp olive oil
Instructions:
1. Prepare the Meatballs:
In a large mixing bowl, combine the ground meat, egg, breadcrumbs, Parmesan cheese, minced garlic, parsley, onion powder, salt, and pepper.
Mix thoroughly and form into medium-sized meatballs. Set them aside.
2. Cook the Potatoes:
Preheat the oven to 375°F (190°C).
Coat the potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange them evenly in a greased baking dish.
3. Assemble:
Place the meatballs atop the potatoes.
Evenly pour the heavy cream over the potatoes and meatballs. Cover the dish with foil and bake for 30 minutes.
4. Add the Cheese:
After 30 minutes, remove the foil, sprinkle the shredded mozzarella over the dish, and return it to the oven. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.
5. Serve:
Allow the dish to cool for 5 minutes before serving. Optionally, garnish with additional parsley.
