Fried Green Tomatoes

Ingredients:

4-5 medium green tomatoes, cut into 1/4-inch thick slices

Salt and pepper (to taste)

1 cup all-purpose flour

2 large eggs

1/4 cup milk or buttermilk

1 cup cornmeal

1/2 cup breadcrumbs (optional, for added crispiness)

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for heat)

Vegetable oil (for frying)

Instructions:

1. Prepare the Tomatoes
Begin by slicing the green tomatoes into 1/4-inch thick rounds. Lightly season them with salt and pepper, then set aside.

2. Establish the Breading Station
In the first shallow dish, place the flour. In the second dish, whisk together the eggs and milk or buttermilk. In the third dish, mix the cornmeal, breadcrumbs, paprika, and cayenne pepper.

3. Coat the Tomatoes
Dredge each slice of tomato in the flour, shaking off any excess. Next, dip it into the egg mixture, ensuring it is fully coated. Finally, press the slice into the cornmeal mixture, ensuring an even coating.

4. Heat the Oil
Pour approximately 1/2 inch of vegetable oil into a large skillet. Heat over medium heat until the oil reaches a temperature of about 350°F (175°C). You can test the oil’s readiness with a small piece of bread; it should sizzle upon contact.

5. Fry the Tomatoes
Carefully place the breaded tomato slices in the skillet in a single layer. Fry for 2-3 minutes on each side or until they achieve a golden brown color. If necessary, work in batches.

6. Drain and Serve
Using a slotted spoon, remove the fried tomatoes and place them on a plate lined with paper towels to absorb excess oil. Lightly sprinkle with salt.

Serve With:
Ranch dressing, spicy aioli, or a zesty remoulade sauce.
