Bang Bang Chicken Skewers
🛒 Ingredients:
▪️ Wooden skewers, soaked in water for 30 minutes
Chicken
▪️ 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
▪️ 1 tablespoon extra virgin olive oil
▪️ 1 teaspoon paprika
▪️ 1 teaspoon garlic powder
▪️ 1 teaspoon kosher salt
▪️ ½ teaspoon black pepper
Bang Bang Sauce
▪️ 1 ¼ cups (290 g) mayonnaise
▪️ ⅔ cup Thai sweet chili sauce
▪️ 2 teaspoons Sriracha, or to taste
▪️ 2 tablespoons honey
🧑🍳 Instructions:
▪️ In a large mixing bowl, combine the cubed chicken breasts with olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss the mixture to ensure the chicken is evenly coated. Thread 4-5 chicken cubes onto each skewer, working one skewer at a time.
▪️ In a separate small bowl, mix together the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until well combined. This will yield approximately 1 ¾ cups of bang bang sauce. Set aside half of the sauce in another bowl for later use after cooking the chicken, and use the remaining sauce to brush over the chicken skewers.
▪️ Place the skewers in the basket of your air fryer in a single layer. Depending on the air fryer’s capacity, you may need to cook in batches.
▪️ Air fry at 400°F for 11-12 minutes, turning the skewers halfway through the cooking time. The chicken is fully cooked when it reaches an internal temperature of 165°F.
▪️ Once cooked, transfer the skewers to a serving plate and drizzle or brush with the reserved bang bang sauce. Serve immediately.
