Balsamic Peach Pork Chops with Blue Cheese

Ingredients:
– 1 pound pork chops
– 1/2 cup balsamic vinegar
– 2 tablespoons apricot preserves (or honey)
– 2 teaspoons Dijon mustard
– 2 cloves garlic, minced or grated
– 1 teaspoon chopped thyme (optional)
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 2 large peaches, sliced
– 1/4 cup crumbled blue cheese (or feta, optional)

Instructions:
Begin by marinating the pork chops in half of the balsamic mixture, which includes balsamic vinegar, apricot preserves, mustard, garlic, thyme, salt, and pepper. Allow the chops to marinate for a duration of 20 minutes to overnight, while reserving the other half of the mixture.

After marination, remove the excess marinade and pan-fry the pork chops over medium-high heat until they are fully cooked, approximately 3-5 minutes on each side. Once cooked, set the chops aside.

In the same pan, pour in the reserved balsamic mixture and let it simmer until it begins to thicken, which should take about 3 minutes.

Next, add the sliced peaches to the pan and cook them until they are just tender, around 2 minutes.

Serve the pork chops drizzled with the balsamic peach sauce and topped with crumbled blue cheese.
