Pumpkin Cream Cheese Swirl Muffins:

Ingredients:

Muffin Batter:

1 ¾ cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
½ teaspoon salt
2 large eggs
1 cup canned pumpkin puree
½ cup vegetable oil
¼ cup milk
1 teaspoon vanilla extract

Cream Cheese Filling:

8 ounces cream cheese, softened
¼ cup granulated sugar
1 large egg yolk
½ teaspoon vanilla extract

Instructions:

1. Preheat the Oven: Adjust the temperature to 375°F (190°C) and line a muffin tin with paper liners.

2. Prepare the Cream Cheese Filling: In a small bowl, combine the cream cheese, sugar, egg yolk, and vanilla, whisking until the mixture is smooth. Set aside.

3. Create the Muffin Batter: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, spices, and salt. In a separate bowl, mix the eggs, pumpkin puree, oil, milk, and vanilla. Combine the wet ingredients with the dry ingredients, stirring until just blended.

4. Assemble the Muffins: Fill each muffin liner approximately three-quarters full with the batter. Place a spoonful of the cream cheese mixture on top. Use a toothpick or skewer to create swirls of cream cheese within the batter.

5. Bake: Place in the oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
