Hamburger soup
Crockpot Creamy Potato & Hamburger Soup
Ingredients:
– 1 pound ground beef
– 1 onion, chopped
– 3 to 4 large russet potatoes, peeled and chopped
– 3 cups chicken or beef broth
– 1 cup carrots, chopped
– 1 cup celery, chopped
– 1 teaspoon garlic powder
– Salt and pepper to taste
– 1 cup heavy cream (or half-and-half for a lighter option)
– 1 cup shredded cheddar cheese
– 1/4 cup sour cream
– Fresh parsley, chopped (for garnish)
Instructions:
1. Brown the Beef: In a skillet, cook the ground beef and chopped onion over medium heat until browned. Drain any excess fat.
2. Combine Ingredients in Crockpot: Transfer the browned beef, chopped potatoes, carrots, celery, and garlic powder into the crockpot. Season with salt and pepper, then add the broth.
3. Cook: Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes and vegetables are tender.
4. Incorporate Cream and Cheese: Approximately 30 minutes before serving, mix in the heavy cream, shredded cheddar cheese, and sour cream. Allow to cook until the cheese has melted and the soup is creamy.
5. Serve: Garnish with fresh parsley and additional cheese if desired. Enjoy!
