Kielbasa Soup with Potatoes
Ingredients:
– 1 pound kielbasa, cut into rounds
– 4 medium-sized potatoes, peeled and cubed
– 1 medium onion, diced
– 2 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 to 2 cups shredded cheddar cheese
– 2 tablespoons olive oil or butter
– Salt and pepper, to taste
– Optional: chopped parsley for garnish
Instructions:
1. In a large pot, heat the olive oil or butter over medium heat.
2. Add the sliced kielbasa and cook until it is browned. Remove the kielbasa from the pot and set it aside.
3. In the same pot, add the diced onion and sauté until it becomes tender.
4. Incorporate the minced garlic and cook for an additional minute.
5. Pour in the chicken broth and add the cubed potatoes. Bring the mixture to a boil, then lower the heat and let it simmer until the potatoes are soft, approximately 10 to 15 minutes.
6. Mix in the heavy cream and shredded cheddar cheese, stirring until the cheese is fully melted.
7. Return the cooked kielbasa to the pot. Season with salt and pepper according to your preference.
8. Serve the soup warm, garnished with parsley if desired.
