Cowboy Casserole
Ingredients:
– 1 lb ground beef
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 can (10.5 oz) cream of mushroom soup
– 1 can (15 oz) corn kernels, drained
– 1 cup sour cream
– 1 teaspoon onion powder
– 1 teaspoon garlic powder
– 1 teaspoon smoked paprika
– 1/2 teaspoon black pepper
– 1/2 teaspoon salt
– 2 cups shredded cheddar cheese
– 1 bag (32 oz) frozen tater tots
– Fresh parsley for garnish (optional)
Instructions:
1. Cook the beef: In a large skillet over medium heat, brown the ground beef for 5-7 minutes. Add the chopped onion and sauté until softened, approximately 3-4 minutes. Incorporate the minced garlic and continue cooking for an additional minute. Drain any excess fat from the skillet.
2. Prepare the filling: In a large mixing bowl, combine the cream of mushroom soup, drained corn, sour cream, onion powder, garlic powder, smoked paprika, black pepper, and salt. Mix thoroughly until all ingredients are well incorporated.
3. Construct the casserole: Preheat the oven to 375°F (190°C). In a greased 9×13-inch baking dish, evenly distribute the beef mixture across the bottom. Sprinkle 1 cup of shredded cheddar cheese over the beef layer. Arrange the frozen tater tots on top, ensuring they cover the entire surface.
4. Bake the casserole: Place the assembled casserole in the preheated oven and bake for 30-35 minutes, or until the tater tots are crispy and golden, and the cheese is melted and bubbling. In the final 10 minutes of baking, add the remaining 1 cup of cheddar cheese on top of the tater tots.
5. Garnish and serve: After baking, remove the casserole from the oven and allow it to cool for a few minutes. Optionally, garnish with freshly chopped parsley. Serve warm by scooping generous portions onto plates. This hearty dish is ideal for family dinners or potlucks!
