Coconut Chocolate Bars
Ingredients:
2 cups shredded coconut (unsweetened or sweetened, as preferred)
1 cup sweetened condensed milk
1/4 cup powdered sugar
1/2 teaspoon vanilla extract (optional)
1 cup milk chocolate or dark chocolate (for coating)
1 tablespoon coconut oil (optional, to make the chocolate smoother)
Instructions:
1. Prepare Coconut Mixture:
In a mixing bowl, combine the shredded coconut, sweetened condensed milk, powdered sugar, and vanilla extract (if using). Mix well until the ingredients are fully incorporated and the mixture is sticky.
2. Shape the Bars:
With your hands, form the coconut mixture into small bars or bites. Place them on a lined baking sheet or tray.
Chill the bars in the refrigerator for about 1 hour or in the freezer for 20-30 minutes to firm up.
3. Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate with the coconut oil in 30-second intervals, stirring between each, until smooth and melted. Alternatively, you can use a double boiler to melt the chocolate.
4. Coat the Bars:
Using a fork or dipping tool, dip each coconut bar into the melted chocolate, coating it completely. Allow any excess chocolate to drip off.
Place the coated bars back on the lined tray. You can add a decorative drizzle of chocolate on top, if desired.
5. Set the Chocolate:
Refrigerate the bars for 15-20 minutes, or until the chocolate is fully set.
6. Serve and Store:
