Slow Cooker Beef and Cheddar Potato Casserole

Ingredients

1.5 lbs cubed beef stew meat
4 large potatoes, peeled and diced
1 medium onion, chopped
2 cups beef broth
1 cup shredded cheddar cheese, with additional for topping
1/2 cup sour cream
2 tablespoons flour
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
Chopped fresh parsley (for garnish)

Directions

Prepare Ingredients: In a small bowl, combine flour, garlic powder, paprika, salt, and pepper. Dredge the cubed beef stew meat in the flour mixture.

Layer in Slow Cooker: Arrange the diced potatoes at the base of the slow cooker. Top with the chopped onion and the seasoned beef.

Add Broth and Cook: Pour the beef broth over the layered ingredients. Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and potatoes are tender.

Incorporate Cheese and Sour Cream: During the final 30 minutes of cooking, add the cheddar cheese and sour cream. Stir until the cheese is melted and the mixture is creamy.

Serve: Top with additional cheese and chopped parsley. Serve warm and enjoy!
