Sweet Potato Pie:
Ingredients
– 2 cups of cooked and mashed sweet potatoes (approximately 3 medium sweet potatoes)
– 1 1/2 cups of sugar
– 2 tablespoons of flour
– 1 can (5 oz) of evaporated milk, divided
– 1/2 stick (1/4 cup) of melted butter
– 2 eggs
– 1 teaspoon of vanilla extract
– 1/2 teaspoon of cinnamon
– 1/4 teaspoon of nutmeg
– 1 unbaked 9-inch pie crust
Instructions
1. Prepare the Sweet Potatoes: Begin by preheating the oven to 350°F (175°C). Cook the sweet potatoes until they are tender, then peel and mash them until they achieve a smooth consistency.
2. Create the Filling: In a large mixing bowl, combine the mashed sweet potatoes, sugar, and flour. Ensure that the mixture is well blended.
3. Incorporate Additional Ingredients: Add 3 oz (approximately 3/4 of the can) of the evaporated milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Stir the mixture until it is smooth and creamy.
4. Adjust the Mixture’s Consistency: If the filling appears too thick, incorporate the remaining evaporated milk gradually until the desired consistency is achieved.
5. Fill the Pie Crust: Carefully pour the filling into the unbaked pie crust.
