Garlic Butter Chicken Bites with Creamy Parmesan Pasta
Ingredients
For the Chicken Bites:
1 lb boneless, skinless chicken breasts, diced into bite-sized pieces
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, finely chopped
Salt and pepper to taste
1 teaspoon Italian seasoning
Chopped fresh parsley (for garnish)
For the Creamy Parmesan Pasta:
8 oz pasta (such as fettuccine or penne)
1 tablespoon butter
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/2 teaspoon garlic powder
Fresh basil or parsley for garnish (optional)
Instructions
1. Cook the Pasta:
In a pot of salted boiling water, prepare the pasta according to the package instructions until al dente. Drain and set aside.
2. Prepare the Chicken Bites:
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt, pepper, and Italian seasoning. Cook until they are browned and fully cooked, approximately 5-6 minutes. Remove the chicken from the skillet and set aside.
3. Make the Garlic Butter Sauce:
In the same skillet, add the butter and minced garlic. Sauté for about 1-2 minutes until the garlic becomes fragrant but does not burn. Return the chicken to the skillet, tossing it to coat in the garlic butter. Remove the chicken once more and set aside.
4. Prepare the Creamy Parmesan Sauce:
In the same skillet, add an additional tablespoon of butter. Pour in the heavy cream, then stir in the Parmesan cheese and garlic powder. Allow the mixture to cook over low heat until the sauce thickens, which should take about 3-5 minutes. Season with salt and pepper to taste.
5. Combine and Serve:
Add the cooked pasta to the skillet, tossing it to coat in the creamy Parmesan sauce. Top with the chicken bites.
Garnish with fresh parsley or basil and additional Parmesan, if desired. Serve warm and enjoy!
