Southern Fried Salmon Patties:

Ingredients:

1 (14 3/4 ounce) can of salmon, drained

1/4 cup onion, finely chopped

1/4 cup cornmeal

1/4 cup flour

1 egg, beaten

Salt and pepper to taste

Oil for frying (vegetable or canola works well)

Instructions:

1. Prepare the Salmon Mixture: In a medium bowl, mix the drained salmon, chopped onion, cornmeal, flour, and beaten egg. Season with salt and pepper to taste. Combine until well mixed. If the mixture feels too wet, add a bit more cornmeal or flour until it holds together.

2. Shape the Patties: Divide the mixture into equal portions and shape into small patties, about 1/2 inch thick.

3. Fry the Patties: Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, add the patties and cook for 3-4 minutes on each side, or until golden brown and crispy.

4. Drain and Serve: Remove the patties from the skillet and place them on paper towels to drain excess oil. Serve warm, with your favorite dipping sauce or over a bed of greens.
