Pepper casserole

Stuffed Pepper Casserole recipe for you:

Ingredients

1 lb ground beef or turkey

1 onion, diced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) tomato sauce

1 cup beef or chicken broth

1 cup white or brown rice (uncooked)

1 ½ cups shredded cheese (cheddar or mozzarella)

Salt and pepper, to taste

Italian seasoning or parsley, optional, to taste

Instructions

1. Preheat oven to 375°F (190°C).

2. Brown the ground meat with onion and bell pepper in a large skillet over medium heat until fully cooked; drain any excess grease.

3. Add tomatoes, tomato sauce, broth, rice, and seasonings. Stir well to combine.

4. Bring mixture to a simmer and cook for 5-7 minutes, stirring occasionally.

5. Pour mixture into a 9×13 inch baking dish and cover with foil.

6. Bake for 30-35 minutes or until the rice is tender.

7. Remove from oven, uncover, and sprinkle cheese on top. Return to oven for another 5-10 minutes until cheese is melted and bubbly.

8. Let it sit for 5 minutes before serving. Enjoy!

This casserole is perfect for a quick dinner, and you can customize it with additional veggies or spices.
