Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tbsp olive oil (for cooking)
8 oz mushrooms, sliced
4 slices of cooked bacon, crumbled
1 cup shredded cheese (Monterey Jack and cheddar mix works well)
For Honey Mustard Sauce:
½ cup mayonnaise
2 tbsp Dijon mustard
2 tbsp honey
1 tbsp lemon juice
Instructions:
1. Make the Honey Mustard Sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, honey, and lemon juice until smooth. Set aside half of this sauce for topping; reserve the rest for serving.
2. Season the Chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
3. Cook the Chicken: In a large skillet over medium heat, add the olive oil and cook the chicken breasts until browned and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
4. Sauté Mushrooms: In the same skillet, add a little more olive oil if needed and sauté the mushrooms until soft and golden.
5. Assemble and Bake:
Preheat your oven to 400°F (200°C).
Place the cooked chicken breasts on a baking sheet. Brush each breast with the reserved honey mustard sauce, then top with mushrooms, crumbled bacon, and shredded cheese.
6. Bake: Place in the oven for about 5-10 minutes, or until the cheese is melted and bubbly.
