Spinach Stuffed Pastry
Ingredients:
1 sheet of puff pastry, thawed
1 cup fresh spinach, chopped (or use frozen spinach, thawed and drained)
1/2 cup feta cheese, crumbled (or any cheese you prefer)
1/4 cup cream cheese, softened
1 garlic clove, minced (optional)
Salt and pepper, to taste
1 egg, beaten (for egg wash)
Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the filling: In a bowl, combine spinach, feta cheese, cream cheese, garlic, salt, and pepper. Mix until everything is well combined.
3. Roll out the pastry: Unfold the puff pastry sheet on a lightly floured surface. Cut it into squares or rectangles, depending on how big you want your pastries.
4. Fill and seal: Place a spoonful of the spinach mixture in the center of each pastry square. Fold the pastry over to form a triangle (or rectangle) and press the edges with a fork to seal.
5. Brush with egg wash: Lightly brush the top of each pastry with the beaten egg for a golden finish.
6. Bake for 15-20 minutes, or until the pastries are puffed and golden brown.
7. Serve warm and enjoy!
