Creamed Chipped Beef recipe:
Ingredients:
4 oz. dried beef (jarred or packaged, rinsed and chopped)
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk (whole or 2%)
Salt and black pepper to taste
Toast (or biscuits)
Instructions:
1. Prepare the Beef: Rinse the dried beef under cold water to reduce the saltiness, then pat it dry with paper towels. Chop it into small pieces.
2. Make the Roux: In a medium-sized skillet, melt the butter over medium heat. Stir in the flour, whisking constantly, and cook for about 1-2 minutes to get rid of the raw flour taste.
3. Add the Milk: Gradually whisk in the milk, ensuring there are no lumps. Keep stirring until the mixture thickens, about 3-5 minutes.
4. Add the Beef: Stir in the chopped beef and cook for an additional 2-3 minutes until the beef is heated through.
5. Season: Taste and season with salt (if needed) and black pepper.
6. Serve: Spoon the creamed chipped beef over toast, biscuits, or mashed potatoes.
