Ingredients:
1 lb ground beef
4-5 medium potatoes, thinly sliced
1 medium onion, chopped
2 cups shredded cheddar cheese (divided)
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of cheddar soup (or another cream of soup like chicken)
1 cup milk
Salt and pepper to taste
1 tsp garlic powder
1 tsp onion powder
Optional: chopped parsley or green onions for garnish
Instructions:
1. Preheat oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Cook ground beef: In a large skillet, cook the ground beef over medium heat, breaking it up as it cooks. Season with salt, pepper, garlic powder, and onion powder. Once browned and fully cooked, drain any excess fat. Set aside.
3. Prepare the sauce: In a medium bowl, whisk together the cream of mushroom soup, cream of cheddar soup, and milk until smooth.
4. Layer the casserole:
Layer half of the thinly sliced potatoes at the bottom of the prepared baking dish.
Spread half of the chopped onion over the potatoes.
Add half of the cooked ground beef on top of the onions.
Sprinkle 1 cup of shredded cheese over the beef.
Pour half of the soup mixture evenly over the layers.
Repeat the layers with the remaining potatoes, onions, beef, and soup mixture.
5. Top with cheese: Sprinkle the remaining 1 cup of cheddar cheese on top.
6. Bake: Cover the casserole with aluminum foil and bake for 60-70 minutes, or until the potatoes are tender when poked with a fork.
7. Broil for a crispy top (optional): If you’d like a crispy, golden cheese top, remove the foil and broil for 3-5 minutes at the end of baking, until the cheese is bubbly and lightly browned.
8. Serve: Let the casserole rest for a few minutes before serving. Garnish with chopped parsley or green onions, if desired.
