Butter Pecan Cookies—save it so you don’t lose it!
Ingredients:
1 cup unsalted butter, melted
½ cup granulated sugar
1 cup brown sugar
2 large eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups chopped pecans, toasted
Instructions:
1. Preheat Oven: Set oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Mix Wet Ingredients: In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Beat until smooth. Add the eggs one at a time, followed by the vanilla extract. Mix until fully combined.
3. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, stirring just until incorporated.
4. Add Pecans: Gently fold in the toasted pecans.
5. Chill Dough: For best results, chill the dough for about 30 minutes (optional, but helps with thickness).
6. Form Cookies: Scoop out tablespoon-sized portions of dough, rolling them into balls, and place on the prepared baking sheets, spacing them about 2 inches apart.
7. Bake: Bake for 10-12 minutes, or until the edges are golden but the centers remain slightly soft.
8. Cool: Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
