Cheesy Chicken Fritters that you can try:
Ingredients:
2 large chicken breasts, finely diced
1 cup shredded mozzarella cheese (or any cheese you prefer)
1/4 cup grated Parmesan cheese
1/4 cup mayonnaise
1 large egg
2 tablespoons all-purpose flour (or almond flour for a low-carb option)
2 tablespoons chopped fresh parsley or dill
2 garlic cloves, minced
Salt and pepper, to taste
Olive oil or vegetable oil for frying
Instructions:
1. Prep the Chicken: Finely dice the chicken breasts and place them in a large mixing bowl.
2. Mix the Ingredients: Add the shredded mozzarella, Parmesan cheese, mayonnaise, egg, flour, minced garlic, parsley or dill, salt, and pepper. Mix everything together until well combined. The mixture will be somewhat sticky.
3. Form the Fritters: Heat oil in a large skillet over medium heat. While the oil heats, use a spoon or your hands to form small patties or fritters with the chicken mixture.
4. Fry the Fritters: Once the oil is hot, carefully add the fritters to the skillet. Fry for about 3-4 minutes per side, or until golden brown and the chicken is fully cooked through.
