Crockpot Creamy Potato & Hamburger Soup
Ingredients:
1 lb ground beef (hamburger)
4-5 medium russet potatoes, peeled and diced
1 medium onion, chopped
2-3 cloves garlic, minced
3 cups chicken or beef broth
2 cups whole milk or heavy cream
1 cup shredded cheddar cheese
1 cup sour cream (optional for added creaminess)
2 tablespoons all-purpose flour (optional for thickening)
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons butter or oil for cooking
Optional toppings: chopped green onions, extra cheese, bacon bits
Instructions:
1. Brown the beef: In a skillet, heat butter or oil over medium heat. Add the ground beef and cook until browned. Drain excess fat, then set the beef aside.
2. Prepare the potatoes: Place the diced potatoes, chopped onions, and minced garlic into the crockpot. Add the cooked beef on top.
3. Add seasoning and broth: Pour in the chicken or beef broth, ensuring the ingredients are just covered. Stir in paprika, thyme, salt, and pepper.
4. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
5. Add creaminess: In the last 30 minutes of cooking, stir in the milk or heavy cream. If you want a thicker soup, mix the flour with a bit of the milk to create a slurry before adding. Stir in the shredded cheddar cheese and let it melt into the soup.
6. Optional step: For a richer flavor, stir in sour cream just before serving.
7. Serve: Ladle the soup into bowls and top with extra cheese, green onions, or bacon bits if desired.
