Ingredients:

2 lbs ground beef (or substitute with ground turkey)

1 large onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 cans (15 oz each) kidney beans, drained and rinsed

2 cans (15 oz each) diced tomatoes

1 can (15 oz) tomato sauce

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp oregano

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

1 cup beef broth (or water)

Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions:

1. Brown the Meat: In a large pot or Dutch oven, brown the ground beef over medium heat. Break it up as it cooks until fully browned. Drain any excess fat.

2. Sauté Veggies: Add the diced onion, bell pepper, and garlic to the pot. Sauté for 5-7 minutes until the vegetables are soft.

3. Add Spices: Stir in the chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Cook for about 1 minute to release the flavors of the spices.

4. Add Tomatoes and Beans: Pour in the diced tomatoes (with their juices), tomato sauce, kidney beans, and beef broth. Stir everything together to combine.

5. Simmer: Bring the chili to a simmer. Lower the heat to low and cover. Let it simmer for at least 30 minutes, stirring occasionally. The longer you let it simmer, the more the flavors will develop (up to 1 hour or more).

6. Taste and Adjust: After simmering, taste and adjust the seasoning if needed. If you want it spicier, add more cayenne or hot sauce.

7. Serve: Ladle the chili into bowls and top with your favorite toppings like shredded cheese, sour cream, green onions, or jalapeños.
