Simple Sausage Muffins Recipe

Ingredients:

1 lb (450g) breakfast sausage (or any sausage you like)

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

1/2 cup shredded cheese (cheddar works well)

2 large eggs

1 cup milk

1/4 cup melted butter or vegetable oil

Optional: 1/4 cup chopped green onions or herbs for extra flavor

Instructions:

1. Preheat the Oven: Set your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

2. Cook the Sausage: In a skillet, cook the sausage over medium heat until browned and fully cooked. Break it up into small crumbles. Set aside to cool slightly.

3. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.

4. Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, and melted butter (or oil).

5. Combine Everything: Add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the cooked sausage, shredded cheese, and green onions (if using).

6. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

7. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Cool and Serve: Let the muffins cool slightly before serving. They can be enjoyed warm or at room temperature.
