Italian Drunken Noodles

Ingredients:

12 oz wide egg noodles or pappardelle

1 lb Italian sausage (mild or spicy, based on preference)

1 onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

4 cloves garlic, minced

1/2 cup white wine

1 can (14.5 oz) diced tomatoes

1 tsp Italian seasoning

1/4 tsp crushed red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions:

1. Cook the egg noodles according to the package instructions. Drain and set aside.

2. In a large skillet, brown the Italian sausage over medium heat, breaking it up into crumbles as it cooks. Once browned, remove the sausage and set aside.

3. In the same skillet, add the sliced onions and bell peppers. Sauté until softened, about 5 minutes. Add the garlic and cook for another minute.

4. Pour in the white wine, stirring to deglaze the pan. Allow the wine to reduce by half, about 2-3 minutes.

5. Stir in the diced tomatoes, Italian seasoning, and crushed red pepper flakes (if using). Let the sauce simmer for about 10 minutes.

6. Add the cooked sausage back to the skillet and mix it into the sauce. Season with salt and pepper to taste.

7. Toss the cooked noodles with the sausage and sauce mixture until everything is well combined.

8. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
