Pepper Steak in a Crock Pot:

Ingredients:

2 lbs beef sirloin or flank steak, cut into thin strips

1 tsp garlic powder

2 tbsp vegetable oil

2 green bell peppers, sliced

1 red bell pepper, sliced

1 onion, sliced

1 cup beef broth (or 1 beef bouillon cube dissolved in 1 cup hot water)

2 tbsp soy sauce

2 tbsp cornstarch

1/4 cup water

1 can (14.5 oz) diced tomatoes (optional)

Salt and pepper to taste

Instructions:

1. Season and Sear the Beef:

Sprinkle beef strips with garlic powder and some salt and pepper.

In a large skillet, heat vegetable oil over medium-high heat.

Sear the beef for about 5 minutes per side until browned, then transfer to the slow cooker.

2. Prepare the Sauce:

In a small bowl, dissolve the bouillon in hot water or use beef broth.

Stir in soy sauce and cornstarch until smooth. Pour this mixture over the beef in the slow cooker.

3. Add Vegetables:

Add the sliced bell peppers, onions, and optional diced tomatoes into the slow cooker.

4. Cook:

Cover and cook on low for 6-7 hours or on high for 3-4 hours until the beef is tender.

5. Thicken the Sauce (Optional):

If the sauce is too thin, mix 1-2 tbsp of cornstarch with 1/4 cup cold water and stir into the slow cooker. Let it cook for an additional 20-30 minutes until the sauce thickens.

6. Serve:

Serve over white rice or alongside mashed potatoes.
