Stuffed Pepper Soup recipe:
Ingredients:
1 lb ground beef or ground turkey
1 cup onion, diced
2 cloves garlic, minced
3 bell peppers (green, red, or yellow), diced
1 (15 oz) can tomato sauce
1 (14.5 oz) can diced tomatoes (undrained)
1 (15 oz) can beef broth or chicken broth
1 cup cooked rice (white or brown)
1 tsp Italian seasoning
1 tsp paprika
1/2 tsp salt (or to taste)
1/2 tsp black pepper
1 tbsp olive oil
Optional toppings: shredded cheese, fresh parsley
Instructions:
1. Brown the Meat: In a large pot, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
2. Add Vegetables: Stir in the onions, garlic, and diced bell peppers. Cook for 3-5 minutes until the vegetables begin to soften.
3. Add Liquids: Pour in the tomato sauce, diced tomatoes (with their juice), and broth. Stir to combine.
4. Season the Soup: Add Italian seasoning, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes.
5. Stir in Rice: After simmering, stir in the cooked rice. Let it heat through for another 5 minutes.
6. Serve: Ladle the soup into bowls and, if desired, top with shredded cheese and a sprinkle of fresh parsley.
